Chef Brandon Boudet, a New Orleans native, Chef Brandon Boudet is the Executive Chef and co-owner of Dominick’s, Little Dom’s, 101 Coffee Shop and the newly reopened Tom Bergin’s Tavern. Boudet was born and raised in New Orleans. He graduated from the San Francisco’s prestigious California Culinary Academy and has trained with culinary icons Paul Prudhomme and Emeril Lagasse. The duo reopened the beloved watering hole and steak house in May 2012 after a yearlong revitalization. Boudet’s new menu boasts a hearty selection of Irish dishes and steakhouse favorites, staying true to the tavern’s rich steakhouse history and Irish roots. During his rare time outside the kitchen, Boudet enjoys golf, snowboarding and travel.

Philip M. Dobard a resident Angeleno and native New Orleanian, serves as Vice President of the SoFAB Institute, home to the Southern Food & Beverage Museum, Museum of the American Cocktail, the Center for Food Law, Policy & Culture, and SoFAB Media. His work spans film and television production, live theater, and higher education. And he has strong ties, both professional and recreational, to Southern foodways. One grandmother was raised on a sugar plantation in Houma. A grandfather kept honeybees, worked the land, and even ran a snoball stand in Meraux. The other cast for shrimp from the southern shores of Lake Pontchartrain. An aunt once farmed soft-shell crabs on Bayou La Loutre. An uncle worked for the Jackson Brewing Company, makers of Jax Beer. Other family members, among them hunters, shrimpers, and oystermen, still harvest the bounty of the region’s waterways and forests. The many weekends of his youth often were occupied by crabbing or crawfishing from one or another rural roadside. Now a certifiable foodie, Philip enjoys the fantastic fruits of a family of great cooks.
